Summer recipes

Growing up in the sunshine state I was pretty used to warm summers. It was hot during the day but always cooled down at night, thanks to the ocean. My favorite things to eat growing up were BBQ (of course), Spaghetti, and those hot nights when my mom would buy fresh fruit, deli meat, and rolls. Flash forward 12 years and 5 states over and I'm living in humid swamp land where the state bird is the mosquito. I try to avoid turning on the stove and oven all together- especially the way the heat has been the past couple of weeks. Most of my summer cooking is done on the grill or is fresh fruit/vegetables I end up creating a meal out of. Some of my favorite summer meals I've made are below:




*Sockeye salmon with wild rice and lemon cream sauce.





* Fresh fruit-- kids love it, adults love it, and you can have it with breakfast lunch and dinner.

Easy fruit dip:

1 package of cream cheese softened (8 oz)

1 jar of marsh mellow fluff (found in the baking aisle).

Blend together and serve with fresh fruit.



* Fresh Salsa

There are many salsa recipes on the web, I use my dad's (Pictured below).



* Egg whites with spinach and fresh salsa, and side of fruit.



* Asparagus with olive oil and Montreal seasoning-- grilled.
